Ingredients:
2 cups pancake or waffle flour
½ cup sugar
½ tspn nutmeg
½ tspn cinnamon
¼ tspn cloves
3 lg. eggs, separated
½ cup applesauce
4 tbsp melted butter
Mix flour, sugar and spice, until thoroughly blended. Add slightly beaten
egg yolks to applesauce, (mash applesauce if it is homemade and too chunky)
and add to dry ingredients. Add melted butter, and fold in stiffly beaten
egg whites. Bake in a moderately hot waffle iron.
